Lentils

The week starts, and we all begin to work. The children go to school through the computer. It is complicated because they require the help of an adult for homework and to supervise them.

I am thankful to God that I have my mother, Iris, who helps me take care of my little children. I come home after a long day at work and mom has made our favorite meal on this cold day: lentils.

My children, my family and I love to eat those delicious lentils with white rice. At night we all sit at the table as a family. We bless the food and thank God that we can all be together and are united.

Lentils

1 bag of lentils
4 cloves of garlic
1 tray of pork rib
1 shoulder ham
1/2 lb of ground beef
Salt, oil, paprika,
1 pinch of pepper
1 onion
6 strips of Pancetta
3 chorizos
Red and green pepper
1 cup of rice

Boil the lentils with half a pot of water and let them cook over medium heat.

In another pot, prepare the meat and at the end we will add the other ingredients:

In another pot, heat the oil and saute the four cloves of garlic, the onion in small pieces, and the two chopped peppers. Season with salt.

Add the ground beef, the pork ribs, the shoulder ham, the Pancetta strips, and the sliced chorizos.

Cook over low heat.

Once tender, combine with lentils and simmer together an additional 20 minutes.

Finally, this is ready to eat.

We also prepare a pot of rice to accompany the lentils. Enjoy!
